2 cups of rice
100 ml. of olive oil
3 garlic cloves, peeled
5 cups of hot water
2 stalks of parsley
1 jalapeño pepper (optional)
300 gr. of peeled shrimps
2 tablespoons of coriander seeds, mashed or white pepper
Put the rice in hot water, just leave it in the water for 15 minutes, and then wash it until the water is clear.
Drain it completely and fry the rice with some oil, add the garlic cloves and onion and stir gently. Take the extra oil away and add the hot water, the parsley stems, salt and if you want the jalapeño pepper (without seeds).
In a frying pan, fry the shrimps and the coriander seeds for 5 minutes, if at this stage the rice is ready; add garlic and onion to the shrimps.
Look for a nice mold and fill it with rice, then unmold it and place the shrimps around the rice.
