1 large red tomato per person
6 - 8 anchovy fillets per person
½ peeled tomato
½ red pepper
1 garlic clove
Peel half tomato and half cucumber, cut in small pieces.
Add pepper, garlic and parsley.
Place all in a bowl and spice to taste with salt, oil and vinegar.
Wash and slice the tomatoes and layer in each plate.
Add an anchovy layer and cover with the rest of the vegetables you prepared in the bowl.
