1 package cannelloni
2/3 cup Parmesan cheese, grated
500 gr. lean ground beef
1 package frozen spinach, chopped and thawed
3 cups tomato sauce
1/4 cup butter
1/4 cup flour
3 cup milk
3/4 teaspoons pepper
1 garlic clove, finely chopped
1 onion, finely chopped
1 tsp basil
Preheat oven to 170 degrees C. Cook pasta according to package directions, drain (use a colander) and rinse with cold water.
In a saucepan, melt butter, stir in flour and cook for 1 minute, gradually whisk in milk, add 1 teaspoon of salt and 1/4 teaspoon of pepper. Cook, stirring until sauce comes to a boil and thickens.
Stir in 1/3 cup Parmesan cheese. Meanwhile prepare filling in a large saucepan. Heat oil, add garlic and onion, and cook until onion is tender.
Then, add ground beef and stir in spinach, egg, basil, 1/2 teaspoon of pepper and 1/2 teaspoon of salt. Add 1 cup cheese sauce, and mix well. Layer 1 1/2 cups of tomato sauce into a baking dish. Fill cannelloni with beef mixture and place in single layer.
Cover with remaining cheese sauce and garnish with remaining tomato sauce. Sprinkle with remaining Parmesan cheese. Bake uncovered for 35 to 40 minutes or until sauce bubbles.
