Ingredients

  • 12 manicotti shells, cooked

  • 1 package frozen spinach, chopped and thawed

  • 250 gr. ground meat

  • 250 gr. ground turkey

  • 5 tablespoons grated Parmesan cheese

  • 2 cans tomato sauce

  • 1 1/4 teaspoons dried Italian seasoning

  • 1/4 cup onion, finely chopped

  • 2 garlic cloves, minced

  • 1/4 cup egg substitute

  • 1/2 tsp salt

  • 1/8 tsp pepper

  • 1/8 tsp salt

  • Butter

  • White Sauce

  • 3 tablespoons of flour

  • 2 cans of evaporated milk

  • 1 1/2 tablespoons of butter

  • 1/2 tsp salt

Preparation

  1. Place spinach between paper towels to drain extra water, squeeze until barely moist, and set aside.

  2. Place a large skillet coated with some butter over medium heat until hot. Sauté onion and garlic, add spinach and sauté 1 more minute.

  1. Place mixture in a large bowl. In a skillet cook ground meat and turkey over medium heat until brown, stir. Drain and dry with paper towels and add to spinach mixture. Add egg substitute, 2 tablespoons Parmesan cheese, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, and pepper; stir well, and set aside.

  2. Combine tomato sauce, 1/4 teaspoon Italian seasoning, and 1/8 teaspoon salt in a bowl; layer 1 cup over bottom of a baking dish greased with butter.

  3. Preheat oven to 180 degrees C. Stuff each shell with 1/3 cup spinach mixture, layer on top of tomato sauce mixture in baking dish. Pour the remaining tomato sauce mixture over shells and add white sauce over the tomato sauce mixture. Sprinkle with Parmesan cheese. Finally, cover and bake at 180 degrees C for 30 – 40 minutes. Wait 10 minutes before cutting and serving.

White Sauce

  1. Melt butter in a saucepan over medium heat. Add flour and cook for 30 seconds, stirring constantly. Add milk gradually, stirring with a whisk until blended. Stir in salt, cook until thick, stirring constantly 3 minutes.
