4 slices of pork loin, 200 gr. each
8 slices Mozzarella cheese
8 slices green tomato
Use a skillet to simmer the cream and Roquefort cheese, add salt and pepper and stir until it thickens.
Take away from the heat and keep for later.
Meantime, preheat the oven and layer the loin in a baking dish, half of the tomato, half of the Mozzarella cheese, then repeat the tomato and Mozzarella layers and bake until meat is ready.
Serve: Spoon the Roquefort sauce in each dish and place the meat atop.
Garnish with parsley.
