Ingredients

  • Oil

  • ½ cup onion, sliced

  • 1 ½ can fresh tomato

  • 3 bay leaves

  • Oregano

  • 150 gr. butter

  • 1¼ kg. meat, diced

  • 250 gr. pumpkin, diced

  • 250 gr. diced potatoes

  • 100 gr. sweet potatoes

  • 1 can chick peas

  • 1 can kernel corn

  • ½ lt. broth

  • 400 gr. rice

  • 1 can of peaches

  • Salt and pepper to taste

Preparation

  1. Sauté the onion with oil, add the diced meat, bay leaves, diced tomatoes and juice.

  2. Spice with salt and pepper to taste and cook 15 minutes.

  3. Then add butter, broth, pumpkin, potatoes, sweet potatoes, oregano, and only the juice from the chick peas, corn and peaches cans.

  4. Simmer until the meat is tender. Add rice, chick peas and corn; and simmer for 10 more minutes. Add the peaches, in halves and cover. Simmer 10 minutes.

  5. Serve in the same saucepan and don’t stir at any time.
