1.5 kg. of chicken parts
1/4 cup chopped onion
1 cup chopped celery
1/4 cup dry white wine or sherry
1/4 cup vegetable oil
1/4 teaspoon pepper
1 clove garlic, minced
1 teaspoon rosemary
1 1/2 teaspoons salt
Coat chicken with oil.
Place in a heavy skillet and brown on all sides.
Sprinkle with seasonings and then add onion, garlic, celery, rosemary, and wine.
Cover and let simmer for 25 - 30 minutes until chicken is tender.
Stir chicken with the sauce occasionally. Serves 4 to 6.
