Ingredients

  • ½ k lamb’s liver, fresh

  • 1 big glass dry port

  • 4 sage leaves

  • 10 basil leaves

  • 3 garlic cloves

  • 75 gr. celery

  • 1 cinnamon stick

  • 1 tsp cumin

  • 1 tsp ginger

  • ½ tsp white pepper

  • ½ tsp red pepper

  • 30 gr. raw almonds, peeled

  • 25 gr. pine kernels

  • 40 gr. butter

  • Salt

Preparation

  1. Melt the butter in a clay pot and add garlic.

  2. Then add the liver, diced right before the garlic browns, and cook for 5 minutes.

  3. Chop the celery and add. Fry for 3 more minutes and then add the rest of the ingredients.

  4. Cover and cook for 25 minutes.

  5. Serve with a lettuce and mushroom salad, only spiced with vinegar and olive oil.
